CHICKEN PASTA SALAD WITH SASKATOON BERRIES
Ingredients
2 1/2 cups cooked chicken, chopped
3 cups pasta (shells, rotini, penne)
1 cup sliced celery
1 cup snow pea pods
1/4 cup chopped fresh parsley
1 cup fresh Saskatoon berries
1/2 cup chopped red pepper
2-3 tbsps chopped fresh basil
1/2-3/4 cup grated Parmesan cheese
salt and pepper to taste
Dressing
1/2 cup canola oil
1/3 cup red wine vinegar
salt and pepper to taste|2 1/2 cups cooked chicken, chopped

Preparation
Cook pasta according to package instructions. About one minute before it finishes cooking, add the pea pods. Drain, rinse with cold water, and drain again.
In a large bowl, add pasta and pea pods along with remaining salad ingredients, except the parmesan cheese.
Whisk together dressing ingredients. Toss salad with dressing, cover and refrigerate several hours or overnight to blend the flavours. Before serving toss in Parmesan cheese.
A quick way to get cooked chicken is to buy a rotisserie chicken from the grocery store. A 3 lb (1.5 kg) rotisserie chicken provides 2 1/2 – 3 cups of boneless, skinless meat.
If Saskatoon berries aren’t available, use blueberries or blackberries
