CHICKEN SALAD WITH DILL AND CUCUMBERS

Ingredients

1 English cucumber, peeled
1/2 cup crème fraiche*
1/4 cup fresh lemon juice
2 tbsps fresh chopped dill, plus sprigs for garnish
salt to taste
6 tbsps canola oil
3 cups cooked pulled chicken
4 green onions, sliced
ground pepper to taste
lettuce or endive leaves for serving
thick slices of French bread, lightly toasted|1 English cucumber, peeled

Preparation

Cut cucumber in half lengthwise then cut in 1/4 inch slices.  Transfer to a large bowl.

Stir together crème fraiche, 2 Tbsp lemon juice, and chopped dill.  Pour over cucumbers and mix well.  Season to taste with salt.

In a second bowl whisk remaining lemon juice with oil and a pinch of salt.  Add chicken and green onions; stir gently to combine.  Season with pepper.

On a large platter, make a bed of lettuce or endive leaves.  Spread cucumber mixture over lettuce then top with chicken mixture.  Garnish with dill sprigs.  Serve with toasts.

*Crème fraiche is a matured thickened cream.  Look for it in the dairy case of larger grocery stores.  If crème fraiche isn’t available use regular sour cream, or full fat plain unsweetened Greek yogurt.|Cut cucumber in half lengthwise then cut in 1/4 inch slices.  Transfer to a large bowl.
